The Italian food mantra (well, one of them) is the importance of fresh, wholesome ingredients, cooked as simply as possible. We strongly agree and today is testament to that.
Marco has picked dishes with the simplest fare, easy to assemble and even easier to cook (and eat!)
We will make our own pasta and roll it out by hand (we don’t possess a machine for this, by hand is easier.).
Pasta from scratch!
There are so many recipes, some with egg, some without. You can use a processor or do it by hand. It rests in the fridge for 15 minutes to make it easier to roll.
Tagliatelle Carbonara. A real classic with smoked pancetta or streaky bacon, parmesan cheese, egg yolk, cream. Such a yummy meal for all the family.
We will demonstrate :
Risotto. This needs nurturing at the hob, Marco will be stirring throughout! He uses arborio rice, chicken stock, turmeric for colour, garlic and shallots. Its finished with chopped parsley and parmesan cheese and a large knob of cold butter.
Bowtie Pasta Puttanesca. This is full of colour, flavour and it is so nourishing. Its full of olives, tomatoes and tomato paste, capers, garlic and finished with parmesan cheese.
Marco will happily answer questions from our audience as we go along.
We will have a maximum of three households per session for this, so the session is inclusive for all involved.
Top Tech Tip. If you hook up an HDMI cable from your laptop to a TV in your kitchen, you then have two screens to allow you to have an audience at home!
